Recently, there's been a new commercial advertisement for Chipotle highlighting the importance of the griddle in their operations. It's absolutely true—having spent some time working in the kitchen, I can confirm that a good commercial griddle is indeed the backbone of the fast-food industry. Whether it's in college dining halls, long-term care facilities, or quick-service restaurants, almost every commercial kitchen relies on some form of griddle for daily operations. A griddle is essentially a flat metal plate that cooks food by transferring heat directly from the surface to the ingredients. To prevent food from sticking, a thin layer of oil or grease is typically used, either naturally present in the food (like in the case of a burger) or added separately (such as for eggs). These versatile appliances can handle a wide range of foods, including bacon, eggs, chicken, fish, hamburgers, and steaks. In fact, nearly anything you'd cook in a frying pan can also be prepared on a griddle. Some chefs even use the hot surface to warm small pans, like melting butter. Since griddles are so widely used, here are a few practical tips to help you save money and improve efficiency in your commercial kitchen: • Only heat the sections of the griddle you need for the task at hand. Many larger griddles have multiple burners, but heating the entire surface when preparing a smaller meal is unnecessary and wastes energy. • Preheat only until the griddle reaches the optimal cooking temperature. Avoid keeping the griddle running at full power when not actively cooking. • Set the temperature for each section to the minimum required for the specific dish you're preparing. Remember, increasing the temperature won't speed up the preheating process. • During slower periods, turn down or switch off the griddle instead of letting it run continuously at peak temperatures. • Opt for precooked or thawed foods whenever possible, as frozen items require more energy to cook. • Use a lid when appropriate to trap heat and reduce cooking time. • Clean the griddle thoroughly between batches to avoid flavor transfer and maintain hygiene. Depending on the surface material, certain tools may be required for effective cleaning. • Regularly clean and reseason the griddle after each session to ensure optimal performance. • Periodically inspect the griddle for hot or cold spots, which can indicate uneven heating or other issues. • On gas griddles, ensure that each flame burns blue by adjusting the gas-to-air ratio for better efficiency. Remember to always follow safe cooking practices along with these energy-saving tips.
